DEVELOPMENT MANUFACTURING MEAT PRODUCTS FROM REGIONAL UNCONVENTIONAL RESOURCES

Summary. The performed in collaboration with the staff of the GNU Mining – Altai Research Institute evaluation of the quality of carcasses and meat goat breeds Gornoaltaisk showed compliance fatness of carcasses and meat quality of the first category according to GOST GOST R 52843 – 2007 and GOST 7269 – 79 Microbiological safety of meat raw materials meet the requirements of SanPin 2.3.2.1078 – 01 and TRTS 021/2011 «On the safety of food products». The chemical composition of meat goats showed that the different cuts of goat meat, the following biochemical parameters, %: 18,6-20,4 protein, fat 2,75-6,92, ash 0,82-0,93, water 73.54 -78.85. Essential amino acids in the proteins of meat goats amounted%: 1,00-1,06 leucine, lysine 1,76-2,87, threonine 0,8-1,08, suggesting biological usefulness of this type of meat. Protein – a quality indicator (the ratio of tryptophan to hydroxyproline) of various cuts of goat meat, we calculated in accordance with the results of biochemical tests was 7,9-8,9. According to the biochemical composition of meat goats Gornoaltaisk breed in certain cuts of goat meat found the following vitamins (mg / kg): Group E 6,55-6,74, 5,7-6,0 B3, B6 2.6-2.7, B5 34,84-40,82. Because of the current range of delicatessen products from goat meat is virtually absent, we have developed together with the staff of the GNU Mining – Altai Research Institute and approved by TU 9213-001-00078249-10 «Meat goats» expanded the range of gourmet meat products, which includes 8 items: blade Smoked- Baked, ham syrokopchёny, ham boiled-smoked, boiled-smoked ribs, boiled-smoked roll, pressed meat boiled-smoked, jerked fileyka and crunches. Evaluation of the microbiological safety of finished meat products has shown compliance with SanPin 2.3.2.1078 – 01 and TRTS 021/2011 «On the safety of food products.» The performed in accordance with GOST 9959 – 91 organoleptic evaluation delicatessen products identified 3 best: roll boiled – smoked «Ortolyksky» – 7.9 points, ham syrokopchёny «Chuy» – 7.86 score and jerked fileyka «Saylugemskaya»- 7.6 points. Delicatessen products exhibit functional properties of the product, since they have a lower fat content and include the biologically active substance. Technical innovation development is confirmed by the RF patent number 2463812 «Method of manufacturing specialty products from goat meat».
