APPLICATION OF FATTY ACIDS FOR ENRICHMENT OF FOOD FOR CHILDREN SUFFERING PHENYLKETONURIA

Summary. The researches were carried out to study the possibility of enrichment of food production for children suffering phenylketonuria by omega-3 and omega-6 long-chain polyunsaturated fatty acids (LCPUFA). For this purpose the concentrate of LCPUFA «Ropufa» («Ropufa» 10 n-3, JNF Pawder, Switzerland) was added to the recipe of bread and cookies, made on the base of starch mixture “Detka”. The resulting equation of dependency of mass fraction of LCPUFA in low-protein products from «Ropufa» content allows to calculate the amount of the concentrate, which necessary for addition in the product with defined concentration of LCPUFA: lnb = 2.742 – 6.22 (lnx1) / x1 + 0.34x2, where b is protein content to DS of the product, %; х1 is amount of dry yolk, % to DS of the product; x2 is amount of «Ropufa» powder, % to DS of the product. Moreover, there was established the dependence of mass fraction of LCPUFA in low-protein cookies from content of “Ropufa” concentrate (1…3 %): y = 13.1 + 0.179*х3, where y is mass fraction of LCPUFA, % of the total fatty acids; х is the content of the additive, % of DS of baked mixture, using which it is possible to calculate dosage of «Ropufa» to reach defined concentration of LCPUFA. Clinical approbation of specific low-protein cookie, produced using low-protein mixture “Detka”, enriched by natural yolk (6 %) and “Ropufa” concentrate (1 %), was carried out on the base of Psychoneurological Children’s Hospital №6 and Consultative and Diagnostic Center "Scientific Center of Children's Health" of Russian Academy of Medical Sciences. The highest score on five-grade scale by all parameters was received; the product is well maintained by children, not causing the increase in phenylalanine level. Using of product with LCPUFA for children allows enriching the diet by important essential nutrients.
