Summary. The studies were conducted to select and identify the Lactococcus lactis subsp. lactis cultures, possessing wider range of antibacterial action for industrial production of biopreservative based on bacteriocins and L(+)-lactic acid. The researches were conducted with seven strains of Lactococcus lactis subsp. lactis. Four strains with higher nisin-producing activity were allocated. Activated strains synthesize nisin at the level of 4200-5200 ME/cm3 or 100-130 mcg/cm3. The identification of producing cultures (DNA fingerprint of strains by PCR using modified primers of ribosomal sequences) was carried out. It was revealed the difference between the selected cultures and parental strain deposited in the collection. The studied strains were sensitive to antibiotics that inhibited protein synthesis and cell wall synthesis. The selected V-8023 strain of Lactococcus lactis subsp. lactis suppresses the growth of gram-positive bacteria, including spore-forming bacteria (the diameter of zones of growth inhibition was from 17.5 mm to 23.0 mm). The V-8023 strain also suppressed the growth of several gram-negative bacteria – Alcaligenes faеcalis, Pseudomonas aeruginosa, Proteus vulgaris, Proteus mirabilis (the diameter of zones of growth inhibition was from 5.0 mm to 10.0 mm). Based on the experimental results it could be assumed that the spectrum of antibiotic action depended on the strain-specificity of Lactococcus lactis subsp. lactis culture. Probably, V-8023 strain synthesized other type of nisin isomer or synthesized one more bacteriocin in minor amounts along with nisin. Obtained data could be used as a source for the creation of the technological scheme of complex bioconservant production for food and feed products, and various agricultural raw materials.
