Summary. The aim of the research was to study the effect of a breeding trend of sugar beet and its post-harvest physical state on the behavior of the main physiological and biochemical processes and the preservation of roots during prolonged storage under conditions of a targeted exposure to the air environment of piles. Prolonged storage of sugar beet was carried out under industrial conditions in two regimes: the control one – in the unregulated physical environment, the test mode – at creating targeting physical and antimicrobial effect on the environment of piles by covering material of multifunctional action and forced ventilation. Mesh samples from roots of 15 hybrids were placed in piles. The hybrids were of high-yielding, normal and sugary types; with a degree of wilting in the range of 0.6-12.8 %; the degree of injury was 0-15 %. High-yielding hybrids had the lowest intensity of the main physiological and biochemical processes for all storage options, which is determined by their genetic characteristics. The targeting impact on the air environment of piles contributed to a lower weight loss of beet and sucrose – lower than the rates of natural losses by 1.46 % and 0.12 % respectively. During equal keeping of roots with strong mechanical damages under conditions of the test mode of storage, the decrease in the activity of invertase by 9.4-29.7 % and in the respiration rate by 10.4-18.8 % was observed. The same level of physiological and biochemical processes in the control storage mode was obtained with the less (1.7-6.0 times) content of mechanically damaged roots. A similar trend was also observed under conditions of the test storage mode for the degree of roots wilting, but with a greater decrease in the respiration rate and activity of invertase. The level of intensity of physiological and biochemical processes in the test mode was lower and corresponded to the level of the control mode when the degree of wilting of roots was 1.3-1.5 times lower. The targeted physical and antimicrobial exposure to the physical environment of piles provides high storage performance, including for injured and withered roots.
