Summary. The restoration of potato starch production in our country requires a system approach to analysis of present technologies of potato processing in relation to its producers to arrange an agro-food technology. Key operations, affecting the degree of starch extraction, that should be studied, are grinding of tubers, extraction of starch from grinded potato, extraction of potato juice from starch slurry. High degree of tubers grinding to free starch grains from cells up to 95 % is achieved at the peripheral speed of serrate drum of a grater over 85 m/s. The degree of grinding was a main indicator for estimation of technological properties of 10 potato varieties with different starch content. Tubers with starch content of 25 % have the highest content of dry matter (30 %) and the least concentration (5 %) of other components (cellulose, soluble substances). The dependence of potato tubers consumption for production of 1 ton of commercial starch with humidity of 20 % was determined: at starch content in tubers of 25 % the consumption is 3.7 tons, at 14 % it was 6.7 tons. Potato varieties with starch content over 18 % were recommended for processing into starch: Bronnitskii, Nikulinskii, Nadezhda, Vytok, Zdabytak, Temp. In special farms for the commercial production of potato it can be recommended to use a new compact potato processing line with a minimum number of technological equipment, which is achieved by combining technological operations and development of new equipment. The basis of the line is a hydrocyclone station containing three blocks, where multicyclones are connected by a cross scheme, which improves separating ability of the station. The line could be efficiently used for processing of non-conditioned potato due to the low cost of raw materials.
