Summary. The breeding work on winter rye in Krasnoyarsk Agricultural Research Institute was carried out in collaboration with the Federal Research Center N.I. Vavilov All-Russian Institute of Plant Genetic Resources. On the basis of varieties Mininskaya and Enisejka, released in Eastern Siberia, it was formed a population (breeding number 94/12) with a low content of water-soluble arabinoxylans (0.42 %). On the basis of the results of a competitive test this sample was passed to the State variety testing in 2014 under the name’ Krasnoyarskaya Universalnaya’. The aim of the studies was to examine the agro-biological and baking qualities of the promising winter rye variety Krasnoyarskaya Universalnaya in comparison with the released baking variety Enisejka. The test was carried out in 2013–2015 on the experimental fields, located in the central part of the Krasnoyarsk forest-steppe. The soil of the plot was leached chernozem. During the years of the research, the productivity of the standard variety ranged from 3.11 to 3.52 t/ha. Krasnoyarskaya Universalnaya did not inferior to it in productivity, and in 2014 it significantly (by 18 %) exceeded it. The extreme weather conditions during the years of the study allowed us to estimate breeding material on resistance to unfavorable environmental factors. The promising variety showed winter hardiness (4.8 points) and resistance to lodging (4.5 points) equal to the standard. Krasnoyarskaya Universalnaya exceeds the standard in the weight of 1000 grains and grain nature, it is characterized by good processing properties, including the years with unfavorable weather conditions. The amylolytic activity of the new variety, as well as of the standard, is more than 350 UAm; flour suitable for baking with ferments and yeast was obtained from the grain of both varieties. The total baking score of the new variety is at the level of the standard (4.0 points), according to the volumetric output of bread Krasnoyarskaya Universalnaya superiors the standard.
