Abstract. Today carrot is one of the most widely grown crops throughout the world. An important characteristic of its root crops is sugar content. The purpose of the study was to develop a method for the rapid determination of total sugar (TS) content in carrot (Daucus carota L.) using the method of refractometry. The method is based on the use of the experimentally deduced coefficient of an equation of the relationship between the refractive index of the juice from a carrot sample and the sugar content: W(sugar) = k x Bx, where W(sugar) is the mass fraction of total sugar, %; Bx is the result of refractometric measurement in units of the international scale for sucrose (Brix scale), %. The coefficient k is calculated on the basis of the results of parallel determination of sugars by classical chemical methods and refractometric measurements for squeezed juice from several samples of carrots of the examined root crops: k = W (sugar)i : Bxi. For the studied samples of carrot ‘Nantskaya’ it varied in the range of 0.65–0.70. The coefficient k slightly varied during the storage of root crops (up to 7 months) and can be successfully used for express evaluation of the sugar content for the fresh crop, as well as during storage of the root crops. The empirical coefficient of the equation of the relationship between the indications of a refractometer for pressed juice and the content of total sugars in carrot, can be pre-determined experimentally for a particular batch of root crops. The developed technique allows the use of a refractometer instead of direct, time-consuming and reagent consumption, methods for a more express economical option without significant loss of analysis quality.
