Effect of Rheometer Parameters on the Results Reliability of Automatic Control of the Formation of Rennet Clot

Abstract. On the basis of preconceptual study, were made plan of complete factorial experiment CFE 23, which results were processed with usage of MathCad. Variation range of researched parameters: surface area of pressure plate Х1 = (11,5…32,5) • 10-3 м2, oscillatory amplitude of pressure plate Х2 = (3…5) • 10-3 м; linear oscillations frequency of pressure plate Х3 = (0,03349…0,9211) с-1. When variation range of research parameters were pointed out, analyze of selective regression equation, which validity check was realized with usage of F-test, has shown that big influence on outcome parameter have surface area of pressure plate. Second largest is linear oscillations frequency of pressure plate. Influence of oscillatory amplitude insignificant. In the same time, significant influence on outcome parameter has interplay of amplitude and oscillations frequency of pressure plate. To study interplay of given measure and to find out their optimal value, regression equation was changed into two-variable function. After this, graphing of received function as the response surface was conducted. As follows form the analysis of response surface was established that during increasing of parameter value X3 in given range, efficiency of parameter X2 on Y is decreasing. Obtained results allows for the conclusion that for optimization of outcome parameter θ it is appropriate to use oscillatory amplitude of pressure plate Х2 = 5 • 10-3 м, linear oscillations frequency Х3 = 0,9211 с-1 and add obtained results. For evaluation of integrity of rennet clot, were made relative experimental research on new vibration flowmeter VRS-1 and on certificated laboratory coaxial-cylinder viscometer Rheotest-2. Obtained rheograms has similar nature and exertion of particular phases’ duration. Total duration of formation of rennet clot’s process not exceed 3-4%. This leads to the conclusion that new vibration flowmeter VRS-1 can be used in technological process of automatic control system in production of rennet and lactic cheeses.
