Abstract. A series of studies was conducted to investigate peculiarities of interstitial metabolism in sheep when adding an antioxidant – dihydroquercetin (DHQ) – and organic iodine (OI) to their diet. The main objective was to develop a method of physiological and biochemical regulation of life processes in animals. The work was performed on fistulated sheep aged two years (n = 6) by the method of group and periods. In the first experimental period, the animals’ diet was supplemented with feed mixture 1, consisting of DHQ in the form of a feed supplement Ecostimul-2 at a dose of 100 mg/head per day, organic iodine (ОI) in the form of a feed additive Prost at a dose of 1.05 mg/head per day and dry malt sprouts as a filler. In the second experimental period, the sheep were given feed mixture 2, consisting exclusively of DHQ at a dose of 100 mg/head per day and a filler. During the period, when the animals received DHQ in combination with OI, we observed an increase in the concentration of total protein in the blood serum due to an increase in the globulin fraction, a decrease in the content of triglycerides and bilirubin, as well as a decrease in the ALT activity. When animals consumed DHQ in the second experimental period, the concentration of globulins in the blood serum decreased, while the albumin fraction increased, which led to a decrease in the total protein. The introduction of DHQ into the feed resulted in a decrease in the concentration of triglycerides (p < 0.001) and bilirubin (p < 0.001), as well as the activity of ALT and AST, which indicates the positive effect of DHQ on the liver and cardiovascular system functions. In comparison with the control period, the introduction of DHQ in combination with OI and DHQ separately contributed to an increase in the content of red blood cells by 13.9% and 16.5%, an increase in the hematocrit level by 5.38% and 6.82%, while the number of leukocytes decreased by 22.7% and 27.0%, respectively.
