Abstract. The study aimed to investigate the possibility of chromatographic separation of carbohydrates from chicory and topinambour syrups for the production of food-grade inulin. We used inulin extract from topinambour and chicory purified by acid coagulation method as well as syrup purified by activated carbon and in ion-exchange resins. The carbohydrates were separated on sulphocathionite in calcium form of the Finex brand (Finland). The inulin of the Beneo GR brand (Belgium) was used as a control sample. The resin in a volume of 150 cm3 was loaded into a 1.7 x 75 cm column, through which the syrup in an amount of 10% (15 cm3) of the resin volume was passed at a temperature of 45–50 C and at an elution rate of 0.9–1.1 cm3/min. The process was controlled by the mass fraction of dry matter, carbohydrate composition, and specific rotation in the column effluent. The inulin-containing syrup carbohydrates were chromatographically separated into three fractions. The yield of the first fraction containing 90–95% of inulin was about 50%; the yield of the second fraction containing 60–63% of inulin and oligosaccharides, and 37% of disaccharides was about 33%; the yield of the third fraction was 18%. We constructed the curves and calculated equations of the dependence of the mass fraction of dry matter, inulin, disaccharides, fructose in the column effluent on its volume based on the results of mathematical processing of the experimental data using the Statistica 10 and Table Curve 2D software packages. The correlation coefficients (0.9892–0.9956), calculated from experimental data, showed the adequacy of the equations of these dependencies. We developed the technological mode of chromatographic separation of inulin-containing extract carbohydrates and syrup into fractions of various carbohydrate composition.
