Abstract. The purpose of the research was to study the effect of the enzyme endoinulinase preparation of Novozyme 960 on the efficiency of hydrolysis of an inulin solution to determine the optimal process parameters. Hydrolysis was conducted at the temperature of 55–58 C and pH of 4.7–5.2 units; solids content was 19.6%; the duration of the process was 24, 48, and 72 hours; dosages of the preparation were 0.3 INU/g, 0.4 INU/g, 0.5 INU/g, 1.2 INU/g, and 5.0 INU/g of the dry matter of the inulin solution. As a control, we used a sample of oligofructose of the Raftilose brand of the following carbohydrate composition: mass fraction of fructooligosaccharides (FOS) was 70.12%; mass fraction of oligofructosides was 24.79%; mass fraction of disaccharides was 2.11%; mass fraction of fructose was 2.98%. The carbohydrate composition of oligofructose after inulin hydrolysis was determined on a liquid chromatograph with a Gilson refractometric sensor. An optimal ratio of carbohydrates in oligofructose was achieved at the dosage of 0.3–0.4 INU/g of the dry matter of the solution and at the hydrolysis duration of 22–24 hours. The mass fraction of FOS in the oligofructose sample produced in this option was 73.04%; the mass fraction of oligofructosides was 22.79%; the mass fraction of disaccharides was 1.74%; the mass fraction of fructose was 2.43%; the sum of FOS and oligofructosides accounted for 95.83%; di- and monosaccharides accounted for 4.17%. The carbohydrate composition of the produced sample corresponded to the quality of oligofructose of the Raftilose brand. An increase in the dosage of the inulinase preparation to 1 INU/g, 2 INU/g, and 5 INU/g of the dry matter of the inulin solution led to an increase in the sum of di- and monosaccharides to 17.22–18.57%, which was 3 times higher than the value of this indicator in the control sample.
