Abstract. The production of healthy food remains relevant. People are lacking essential biological substances. The inclusion of various types of agricultural raw materials into the composition of food products allows for improving the quality indicators of finished products. The research aimed to develop production technology for a healthy multicomponent chilled dessert and to study its qualities. The main raw material used was locally produced plant components – pumpkin and apple. Additional ingredients were yoghurt, honey, ginger syrup, stevia, blackberries, pine nuts, and orange. We developed recipes for three products, assessed their qualitative and quantitative characteristics, and established nutritional and energy value as well as concentrations of minerals and vitamins. A multicomponent chilled dessert based on processed pumpkins and apples was recognized as a healthy product and recommended for all social groups. The protein content in the produced parfaits varied from 4.38 g to 4.51 g; fat content varied from 3.31 g to 3.38 g; carbohydrate content varied from 11.59 to 14.54 g; vitamin C content varied from 2.87 mg/100 g to 11.87 mg/100 g; vitamin A – from 74.53 ug/100 g to 76.80 ug/100 g; thiamine (vitamin B1) and riboflavin (vitamin B2) contents were 0.05 mg/100 g and 0.09 mg/100 g, respectively; niacin (PP) content was 1 mg/100 g. A portion of the developed multicomponent chilled dessert with a volume varying from 110 g to 125 g (depending on the recipe) satisfies more than 15% of a person’s daily potassium need; the dessert with orange satisfies vitamin C need.
