Nutrition quality improving of Siberian residents through the production of biologized functional products

Abstract. Vitamin C deficiency in the diet of the population of the Siberian regions is about 70%, a similar situation for vitamins A, group B, folic acid and mineral elements (iodine, selenium, iron, calcium). The purpose of the study is to study the possibilities of introducing foreign exotic crops containing an increased amount of nutrients under the conditions of frame area in Siberia. The results of the SWOT analysis indicate a change in the preferences of consumers (mainly urban residents) towards a healthy and functional diet, which gives new opportunities for growing exotic fruits and vegetables in the Siberian region. At the same time, there are certain risks, among which are residents’ relation to exotic fruits and vegetables; high price; possible side effects of their use. These crops include kiwano – a functional food product that can make up for nutritional deficiencies in the human body. It contains such valuable micronutrients as vitamin A (7 mg/100 g), β-carotene (880 mcg/100 g), vitamin C (5.3 mg/100 g), iron (1.13 mg/100 g) magnesium, phosphorus, zinc. In terms of iron content, kiwano exceeds cucumber by 3.8 times, β-carotene – by 20 times. Experiments on the cultivation of kivano under the conditions of a short summer in Novosibirsk showed good results when using biological preparations. The use of Fitop 8.67-8 and Agrofit-humate-B (AFH-B) increased the crop yield in the second year of cultivation by an average of 1.9 times. Kiwano optimally suites for greenhouse conditions. Growing crops in Siberia will reduce the cost of production and make it more accessible to the population.
