Summary. In recent years, the growth of the moose population in the north of the Krasnoyarsk Territory. For the local People’s Region Taimyr elk meat is a major source of food and survival in the current socioeconomic situation. Information on the biological value and biochemical composition of meat is very limited chenny. On this basis, the aim of our research was to study the biochemical indicators and biological value of elk on the Taimyr Peninsula . The studies found that the protein content in meat elk Taimyr is 85,85% , fat – 1,63% , 4,84% ash elements . Calorie- 100g of meat is 358,07 kcal, the energy content of -1499,95 kJ that can be attributed to its high-calorie energetically food product . Elk meat is rich in content of fatty acids. Sum Marnie their level of 84,10 g/kg. Marked predominance of unsaturated fatty acids. The ratio of saturated to acids is 1,58:1. The mineral composition of elk meat represented the core group of essential elements such as calcium, phosphorus forms, potassium, sodium, magnesium, iron, manganese, copper and zinc. The total level of makroelements of 24.97g/kg, microelements – 262,10mg/kg. Elk meat is rich in content NIJ macronutrients, potassium, phosphorus and sodium (22,64g/kg) and trace elements – iron and zinc (255,00mg/kg). Elk meat is quite balanced in essential amino acid composition of a food product, relative to the standard (79,72 %). When calculating the quality of the protein of the indicator its value was 19,11.
