Summary. In 2003–2013 in KASIB network in the steppe zone of Kazakhstan and Western Siberia the spring bread wheat varieties of Omsk State Agrarian University named after P.A. Stolypin breeding were studied on the grain quality whit using of genetic, biochemical and technological methods. All studied varieties were carried to medium hard-seeded and hard-seeded classes, the index of hard-seedness is 61-103 that defines baked utilization of varieties. The gluteninum composition of these varieties were characterized by 9 electrophoresis types: on 1A – 0, 1 and 2* alleles, 1B –7 + 9 and 7 + 8 and their mix; 1D – 5 + 10 and 2 + 12. Genetic potential of varieties quality is rather high – on the level 9 points by Payne and 14-16 by Pogna. The low quality subunits are revealed in varieties Niva 2, Golubkovskaya, Lutescens 43-04 and Lutescens 89-06 (2 + 12 on 1D), Eritrospermum 95/07 (0/2 on 1A) and Chernyava 13 grain quality is reduced due to existence of wheat-rye translocation. Eritrospermum 78, Lutescens 16-04 and OSAU 90 depending on conditions region and reproduction (60…100%) formed grain with force «strong», Golubkovskaya – «good filler» and Chernyava 13 – «weak».
