Summary. The main aim of the research was to determine the energy value of the heart, liver and gizzard quail Japanese breed in the 1, 30 and 60 day. Problem as follows: to establish changes in the dynamics of live weight; find the weight of offal at the age 1, 30 and 60 days; to determine the amount of protein and fat in the organs; calculate the energy value of byproducts quail at age 1, 30 and 60 days. As a result of studies, it was found that the weight of the heart in the 30 days increased 12,0 times, liver and gizzard 10,4 and 5,4 times respectively, in 60 days 19,5, 14,5, 8,4 times compared with the daily age. In the heart 60 days increased the protein content of 6,77 % and fat reduced by 2,07 %. In the liver, the level of fat in 30 days has not changed , and to 60 – increased by 5,24 % compared with the daily age; concentration in body fat increased by 1,86-3,48 %; protein content in the stomach does not change with age, and fat – increased by 0,53-1,67 %. With age, the energy value of gizzard has no differences, but in the liver as early as 30 days energy value increased by 129,00 kJ, in the heart of this index increased only 60 days and was 111,16 kJ in the 1, 30 and 60 days.
