LACTIC ACID BACTERIA FROM DIFFERENT CLIMATIC ZONES

Summary. Physiological and biochemical characteristics of lactic acid bacteria isolated from dairy products from various geographic zones were examined. Formation of functional groups and specific colonies of microorganisms depends on climatic conditions. The main purpose of the research was the detection of acquired resistance to antimicrobial agents of natural sensitive lactic bacteria from dairy products. The appearance of new mechanisms of resistance to antibiotics of different classes in microorganisms demanded a clear assessment of microflora in dairy products. To characterize the biochemical features of lactic bacteria modern analyzer Easy-Xyty, infrared spectroscopy, ion-selective electrodes were used; physiological activity of lactic acid bacteria was determined by their sensitivity to antibiotics (aminoglycosides, macrolides and B-lactam classes) by disco-diffusion method. The acquired resistance of microorganisms from dairy products from southern zone was revealed. Geographical and environmental factors change the qualitative composition, biochemical activity and resistance of bacteria in nature, and also form the functional groups of microorganisms. For the first time by the example of lactic bacteria and yeasts from dairy products of different geographical zones the dependence of the physiological characteristics of microorganisms from their habitat was determined. Lactic acid bacteria and yeast from southern zone can be successfully used for creating food for people with weakened immune systems.
