Summary. In the studies carried out during 20 years (1987-2000, 2003, 2004, 2007, 2008, 2011, 2012) the dependence of gluten content in winter wheat grain on such agricultural practices as a preceding crop, a tillage method, organic and mineral fertilizer application in the years with different weather conditions was established. With optimal moistening conditions the best preceding crop for winter wheat on gluten content is bare fallow, in the years with excessive moistening conditions it was the first year perennial grasses, and in the years with insufficient moistening conditions it was the second year perennial grasses. Moldboard plowing under any moistening conditions provides maximum gluten content in winter wheat grain when it was sown after bare fallow (23.8…28.9 %). Subsurface tillage had an advantage under conditions of insufficient (+3.4 %) and optimal (+1.7 %) moistening with the first year perennial grasses as a preceding crop. After the second year perennial grasses under insufficient moistening conditions greater gluten accumulation in the grain was noted with plowing (26.5 %), and under the conditions of optimal and excessive moistening it was provided by subsurface tillage (26.1 и 26.9 % accordingly). Organic fertilizers had a maximum influence on gluten content increase in grain (2.1…2.2 %) in the cases of poor and excessive moistening when winter wheat was sown after the second year perennial grasses. Mineral fertilizers had a maximum effect on the gluten content in the grain under conditions of excessive moistening with bare fallow and the second year perennial grasses used as a preceding crop (+3.4 и 2.4 % accordingly) and under conditions of insufficient moistening when it was sown after the first year perennial grasses (+2.0 %).
