Summary. The article presents the results of the comparison of milk production, chemical and amino acid composition of milk from cows of red-and-white breed and their hybrids with red-and-white Holstein breed of European breeding. In milk yield hybrid animals of all genotypes surpass contemporaries of red-and-white breed by 316…1407 kg. Milk of crossbred cows was better in chemical composition, the content of fat was higher by 0.05…0.65 %, protein – by 0.1…0.25 %. The total amino acid content in the production of hybrids, except crossbred cows of German breeding, was higher by 0.045…0.135 %. The highest amino-acid index, which characterizes the biological value of milk, was noted in hybrid animals, obtained from Holstein bulls of Dutch breeding. Animals with high milk yields had the best exterior. Animals of German breeding and hybrids of the second generation are related to this group. Compared to red-and-white breed the body volume of highly productive animals is more by 4.1 points, degree of manifestation of breast forms – by 4.5 points, udder – by 3.0 points, and general appearance – by 3.5 points. In milk ejection hybrid animals of Danish and German breeding as well as crossbred cows of the second generation significantly surpass red-and-white cows of the same age.
