Summary. The article presents the results of an experimental study of different methods of hide cure from the body and legs of ostrich, including green-salting cure by dry salting or brining and dry salting. It was distinguished the influence of preservation method on the change of weight, size, moisture and fat content in the chemical composition of ostrich hides. The least losses of hides on the mass and size is characteristic for green-salting cure by dry salting with spreading; in this case the residual hide mass from the body was 77.4%, from the legs–86.7%; the residual hide size from the body was 95.8%, from the legs–98.2%. It reveals greater stability of the structure of skin tissue. It was revealed excessive greasiness of hides from body of ostrich tenfold exceeding the content of fatty substances on leg hides (34.6% compared to 3.6%). The organoleptic evaluation of the quality change of rawhide during prolonged storage under extreme conditions was carried out. It was defined the peroxide, anisidine and acid indices of the fatty layer of body hides of ostrich for different periods of storage and preservation variants. In order to storage ostrich hides during one month it is enough to use NaCl. For the period up to five months it is advisable to use phenolic stabilizer in a preservative mixture. For longer storage it is recommended to spray hides by a solution of phenolic stabilizer in the activator dimethyl sulfoxide, followed by processing by NaCl. The introduction of the antioxidant and activator prevents oxidative damage of ostrich hides, speeds up soaking and ensures the preservation of the original quality of raw materials. Technological procedures and modes of ostrich hides cure are proposed and described in the article.
