Summary. The results of development of the portable color analyzer for evaluation of quality of poultry meat are presented. The device enables to evaluate meat freshness and its quality characteristics. The structure and operating principle of this colorimetric analyzer during imagine translation of meat samples is described. It is developed the software for the evaluation of meat quality signs according to color images of its samples, which enables to determine mean dominating wavelength and saturation, as well as their deviations for selected area of digital image of the sample. One of the essential distinctive features of the developed algorithm is the thresholding procedure, which eliminates low-informative points out of the selected image area. It is provided the output of two-dimensional maps and three-dimensional distributions of calculated values of dominating wavelength and saturation for each point of the image (pixel). The special correcting procedure for algorithm of dominant wavelength calculation is elaborated. The calibration of the color analyzer and program was realized on the basis of the color standard atlas and the spectral light from the optical monochromator. The proposed procedure enhances the accuracy of calculation of spectral colors up to ±2.5 nm in the range 380-645 nm. The analyzer not only determines the quantitative parameters of color of meat samples, but also enables to control their changes with high accuracy. We verified device with meat samples produced at poultry plants. Experimental results demonstrated the significant differences in dominating wavelengths for meat samples of hens and broilers, and they indicated the real storage time of meat.
