PRODUCTION OF RETENTATES OF CORN EXTRACT ON MEMBRANE UNITS

Summary. The article characterizes the domestic technology of production of concentrated corn extract (CCE) using modern membrane units, based on the baromembrane processes (BMP) of ultrafiltration and reverse osmosis. Application of these processes in two stages enables to produce high-quality retentates of CCE with high content of protein and other biologically active substances, meeting the requirements of not only feeding, but also food, medicine and microbiological industries. Application of BMP in contrast to vacuum-evaporators excludes the formation of melanoidins, which are not digested by digestive enzymes. The concentration of extracts in the membrane units occurs at a lower temperature (about 45 degrees), than in vacuum-evaporators (about 60 degrees), which leads to the decrease in the thermal denaturation of proteins and other biologically active substances. The energy component in production cost of CCE can be reduced 4.5 times on the basis of membrane processes. The use of CCE samples, produced under conditions of OAO “Khobotovskoe Predpriyatie “Krakhmaloproduct”, ensured higher output of lysine, “acid” protease, carotinoid and bakery yeast at the biosynthesis, than the concentrate, produced in the vacuum-evaporator. The retentate is characterized by higher consumer properties, since it is clear, underwent cold “sterilization”, has better solubility and light-yellow color (similar to the color of the condensed milk).
