Summary. The “dry” method of starch separation from cereal flour has some advantages to the “wet” one, since there is no waste water during its realization. Wheat, rye barley, triticale, used as a raw material for starch production, distinguished by bimodal dispersion of starch granule, which is characterized by the presence of the fraction with starch grain less than 15 micrometers, comparable with protein particles, amounted to 10-15%. That is why the portion of starch in the heavy fraction does not exceed 82% after pneumatic sorting. The aim of the investigation was to increase the output of starch with the heavy fraction and to reduce its content in the protein (light) fraction. On the basis of the analysis of the present constructions of pneumatic sorters of flour and the experience of hydraulic thin-layer separation of starch-protein suspension, which included starch particles with the average size 18 micrometers and insoluble protein (gluten) particles 1-10 micrometers, there is proposed completely new decision for vortex thin-layer separation in narrow channel of rotating wheel of centrifugal sorter. The experimental unit includes flour disintegrator and cyclone with in-built new centrifugal pneumatic sorter. At this unit we carried out the investigations using dispersed triticale flour and established that the critical speed of wheel chamber is 15 m/s for separation fine starch and protein particles. Its further increase did not cause the reduction of starch content in light fraction. If the starch and protein content in the source triticale flour was 74.7 and 10%, respectively, after dispersion by the unit with vortex thin-layer separation, the starch and protein content in the heavy (starch) fraction was 88.6 and 5.4%, correspondingly; and in the light (protein) fraction these values were 42 and 32.5%.
