Summary. The article presents the results of the study of quality characteristics of grain of winter triticale varieties Kapriz, Kapral, Atstek, Donslav, Skolot, Piligrim, Ramzaj, Ramzes. The correlations of quality characteristics of grain with hydrothermal indicators were revealed. Field experiments were carried out in the northwest area of Rostov region in 2009-2014. The variation degree of the certain quality indices was determined. The variation coefficient of protein content ranged from 5.7 to 15.8% in different varieties, the gluten content–from 17.5 to 35.5%, the volume of bread–from 13.9 to 29.1%. Along with genotypic characteristics, the formation of qualitative characteristics of is grain greatly influenced by environmental conditions. Quality signs the most closely correlates with precipitation amount during grain formation. Grain-unit, the content of protein and gluten, bread volume negatively correlate with the amount of precipitation; the correlation coefficients between the signs varied from -0.47 to -0.88; from -0.23 to -0.82; from -0.17 to -0.76, and from -0.04 to -0.75, respectively. Volume yield of bread for the majority of varieties directly depends on the accumulated temperature during grain filling. Correlation coefficient varied from 0.09 to 0.89. An absence or minimal number of strong and middle contingencies (both positive and negative ones) between grain quality indices and hydrothermal indicators can serve as the measure of the stability of such indices. The minimal number of such correlations was found in the Atstek, Donslav and Skolot varieties of triticale.
