Summary. The objective of this research was to study age-related changes of adipose tissue growth and its distribution in carcasses of cross-breed bull-calves, obtained from crossing of Simmenthal cows with both Hereford and Charolais sires. The experiment was carried out on the base of Tula Research Institute of Agriculture. Three groups of bull-calves in 17 head were formed for the experiment by the method of pair-analogues, taking into account the origin, age and birth weight. The first group (the control one) included animals of Simmenthal breed (S), the second–crosses with Herefords (H x S), the third–crosses with Charolais (C x S). The experiment was conducted since the birth till 18 months age. In Charolais cross-breeds, up to 15 months, the weight of visceral fat in absolute and relative expressions was smaller than in bull-calves of the other groups. Simmenthal bull-calves and Hereford cross-breeds by this index at the end of the experimental period surpassed reliably Charolais bull-calves by 35.4 and 32.3%, correspondingly. Hereford cross-breeds in all age periods were distinguished by more intensive deposition of both subcutaneous and intermuscular fat, total weight of which at the age of 18 months was higher by 15.8% than in bull-calves from the first group, and by 51.1%–from the third group. The highest intensity of growth was characteristic for intermuscular fat, average daily gains of which at the end of the experiment reached in bull-calves of different groups 21.0-52.2 g. Intramuscular fat storage was characterized by the lowest intensity of lipid storage; it was 11.6-16.0 g in a day at the end of the test.
