Summary. The aim of this work was to study the effect of Holstein breed in crosses with Black-and-White and Simmental ones on meat productivity of young animals and efficiency of beef production under conditions of industrial technology. The studies were carried out in 2013-2014 in Almet’evsk district of the Republic of Tatarstan in four groups of calves at 18 head in each one (I group – Black-and-White breed, II – Holstein x Black-and-White, III – Simmental, IV – Holstein x Simmental) according to the conventional techniques of zootechny. The control slaughter was done at the age of 15 months. The relatively high values both in live weight, and output of the slaughter products were observed in calves of Simmental breed and its hybrids. Their carcasses were heavier by 7.1 and 2.2% than that of their coevals of Black-and-White breed and its hybrids. For these animals more favorable ratio of tissue in the carcass was observed. The superiority of flesh weight in young Simmental animals over I, II and IV groups was 7.5, 7.8 and 5.2%. They also distinguished by conversion of protein in food protein and dietary energy into energy of the edible part of the body. The advantage over their peers from the I, II and IV groups was: for protein – 2.0-3.7%; for energy – 2.0-5.2%. The biological value of the longissimus muscle of calves from all groups was at a relatively high level: 7.94-8.01. The profitability of beef production in the industrial complex was the highest in bulls of the third group (25.6%); the superiority over their peers from other experimental groups was 1.7-2.4%. In general, based on the data obtained, we can conclude that the cost is justified by the production of beef under the conditions of industrial technology in all groups.

Keywords: bulls, hybrids, meat productivity, morphological composition, transformation, protein, energy, efficiency.
