Summary. The degree of metabolic disorders in animals and feeding are closely linked. The aim of this study was to evaluate the content of the active ingredients in the animal forage and their correlation with levels of metabolic processes in the body of lactating Holstein cows at the age of 5 years. The investigation was carried out by modern biochemistry methods based on the spectrometry (by end point method, kinetic methods) in the educational farm of Ostrogozhsk Agricultural College (Ostrogozhsk, Voronezh region). There is an imbalance of nutrients both in summer and winter diets of cows. The level of crude protein, crude fiber, essential amino acids, vitamins, macro-and micronutrients is abnormal. It leads to the following results: decrease in the glucose level (by 23.48%) and the triglyceride level (by 96.7%), increase of the cholesterol level (by 53.4%) in animal blood as compared to the normal level. These changes correlate with DST (dynamic surface tension) data of serum: total protein sigma 1 (r = -0.69, Р is more than 0.001), glucose – sigma 0 (r = 0.59, Р is more than 0.001), triglycerides – on sigma 1 (r = -0.60, Рis more than 0.001). For the studied group of cows we recommend to include mineral supplements, vitamin supplements and food with a sufficient amount of amino acids, for example, sunflower cake in the summer diet. It can be used to cover the lack of micro-and macro-nutrients. Beet molasses enables to normalize carbohydrate ratio, because it does not contain starch, but the sugar content is 534 g/kg. It is necessary to include vitamins in the winter diet. We recommend using meat and bone meal as supplements, which contains up to 50% of high-grade protein, micro and macro elements. The introduction of waste of the technical production can balance the content of crude fiber. For example, the content of crude fiber in flax and hemp awn reaches174 g/kg.
Keywords: cows, Holstein breed, biochemical composition of blood, milk, dynamic surface tension.
