INVESTIGATION OF OPTICAL PROPERTIES OF YODOPOLYSACCHARIDE OF CORN STARCH

Summary. The content of amylose is one of the main characteristics of starch quality. It depends on a variety and type of the row material, agrochemical and soil and climatic conditions of its growing. Amylose content defines physical and chemical properties of starch and possibilities of its use in various industries. Breeders work on the development of varieties of potato, grain and legume crops with the increased amylose content in starch. However, the use of the outdated technique of colorimetric determination of the value of this indicator does not correspond to the results received by the modern high-precision devices. The determination of amylose content is carried out by a spectrum-photometric method in the visible spectrum. The influence of different factors on an optical density of iodopolysaccharide compound solutions is investigated. The optimum exposure time for solutions, at which there is a saturation of amylose with iodine, is five minutes. The value of hydrogen ion concentration within the pH range of 6.0-4.5 does not influence the optical density of iodoamylose solutions (pH from 5.0 to 5.5 is desirable). The influence of iodine concentration in solution was investigated within the range of 0.004-0.2 mg/cm3. Iodine greatly affects the optical density of iodoamylose compounds of inclusions. The influence of potassium iodide at KI : I ratio from 3 to 8 is insignificant; the slight decrease is observed at its ratio up to 15. It was carried out a three-factorial experiment by the technique of Latin squares to determine the influence of amylose, iodine, potassium iodide on the optical density of solutions of iodoamylose and iodine-amylopectin compounds of inclusions.
