Summary. Efficient manufacture of products under control of veterinary supervision is provided by technological and zoohygienic standards, the observance of the complex of veterinary and sanitary measures, provision of product quality and safety. In the Russian Federation the modern law norms increase the role of production veterinary and sanitary control by a veterinary specialist of poultry companies. The costs of veterinary and sanitary works including remuneration of labor of veterinary workers influence the cost price of the products; that is why work quality supervision contributes to the successful management of human resources. It was evaluated the work quality of veterinary service in structural subdivisions, which function is a control of poultry products quality. It was found a correspondence of work functions to the substitute position on the base of normative law documents, which determines the qualifications of positions of agriculture stuff. The insignificant reprimands were revealed to the formation of the staff in the analyzed production sectors: the naming of position is associated with the name of unit; the worker, who partially fulfills the function of veterinary orderly and disinfectant, replaces a position outside requirements of existing legal documents. The characteristic to definition of manufacturing veterinary and sanitary control was done. It is determined as activities of veterinary specialists in enterprises, producing and recycling livestock products, for observation of objects, the compliance of veterinary and sanitary works complex in the framework of implementation of labor functions in accordance with duties. The use of analytics calculation method and of analytics experimental method is substantiated with establishing of the need of veterinary staff number. The actual stuff schedule of production sectors manufacturing veterinary and sanitary control fulfills the need to 92.59–99.01 %. Labor rate for employees of different categories during the manufacturing veterinary and sanitary control is 0.99, which demonstrates its high efficiency. Under production conditions the constant control leads to a decrease in the level of revealed contradictions.
