Abstract. The aim of the research was to develop a methodology for determining the radiation dose of chilled fish. To achieve this goal, samples of bone tissue of chilled trout was subjected to the radiation treatment at the doses of 3, 9 and 10 kGy. The studies were carried out using a portable automated EPR spectrometer series Expert Labrador X, developed by the company OOO “Spektr” with the assistance of the Institute of Natural Sciences of B.N. Yeltsin Ural Federal University. Experimental data indicate that imported chilled fish, supplied to the Russian consumer market, is treated by ionizing radiation; and such information is not brought to the consumer. As a result of the investigations, the effect of the dose of irradiation of trout cooled on the amplitude, width, and area of the EPR peak was established, which allows to determine with a high degree of reliability (p is less or equal to 0.05) the radiation dose (the permissible change in amplitude, width, and area of the signal is at the level of ±4% at D more than 1) for rainbow trout. When irradiated with a dose of 3 kGy, the amplitude is 3.28 e-5, the width is 10.81 Gs, the peak area is 1.367 e-4; when irradiated with a dose of 9 kGy, 4.29 e-5, 8.6 Gs, 1.380 ± 0.00083 e-4, respectively; a dose of 10 kGy – 3.88 e-5, 11.78 Gs, 1.558 e-4.
