Abstract. In Russia and abroad maltodextrins is traditionally produced from starch. In the All-Russian research institute of starch products, there was developed the technology of maltodextrin production from cornmeal, produced by crushing corn grains with a preliminary removal of a germ (degermination). The purpose was to define the economic efficiency of maltodextrin production from cornmeal and starch and to choose the most suitable raw materials. In 2017 the price corn was 8.0 rubles per kilogram; and for starch corn, it was 29.0 rubles per kilogram. However, maltodextrin is produced at the enterprises where starch was received by deep processing of corn. The prime cost of starch is 15.4 rubles per kilogram. According to the mass balance, the consumption of dry starch makes 978 kg, and for dry cornmeal, it is 1768 kilogram per ton of maltodextrin. Costs for Costs for raw materials, heat, and electric power, work payment were calculated to calculate the prime costs of maltodextrin. 30.2 rubles per kilogram costed maltodextrin from cornmeal; 29.2 rubles per kilogram – from starch. If the market price of maltodextrin is 40 rubles per kilogram, the profit from cornmeal processing is 6.2 rubles per kilogram, from the processing of starch it is 7.16 rubles per kilogram. After approximate calculations of an equipment cost for the production of maltodextrin from cornmeal the investment cost will make 173.5 million rubles, and from starch, it will be 128.3 million rubles. Besides, capital expenditure for starch production from corn makes 137.7 million rubles. The commercial efficiency coefficient of the maltodextrin production from starch is 0.38, but it’s production from cornmeal it is 0.46. Thus, it is more economical to produce maltodextrin from cornmeal. However, it should be understood that maltodextrins with a reducing substrate content from 15 to 25 % can be obtained from this raw material, whereas maltodextrins with a range of reducing substrate from 4 to 25 %, could be produced from starch.
