Abstract. The paper presents the generation of electroactivated liquid (catholyte), which provides effective destruction of the protein component of ostrich fat during its production. To determine the optimal parameters of catholyte influence on the protein components of ostrich fat, a full factor analysis was used, which made it possible to implement the experiment planning to create the most favorable conditions for the technological process. One of the main element in the technological process of obtaining ostrich fat, characterized by different physical and chemical properties and the temperature of rendering, is electroactivated water. This is an aqueous solution of cations and anions. The aim of the work was to determine the optimal conditions for obtaining an electrolyte solution to ensure high efficiency of ostrich fat rendering. The object of research was electroactivated water, obtained by electrolysis of a saline solution of sodium chloride (NaCl) in an electrolythic bath. The choice of NaCl as an activator of the system was conditioned by the availability and safety of this chemical agent. The concentration of sodium chloride X1 (Z1) and the direct current rate (voltage) X2 (Z2) were chosen as the main factors, significantly influencing the electrolyte. The pH value (Y1) and the redox potential (Y2) are adopted as the response function. To determine optimal conditions and parameters of the electroactivated liquid, a mathematical model in encoded units was calculated using the software Statistika 6.0. The electroactivated liquid was obtained at the given parameters by the electrolysis of a 10% aqueous solution of NaCl at a constant current of 0.5–0.6 A and voltage of 36–50 V, with pH of 9–11 units with an oxidation-reduction potential from -400 to -700 mV and a mass fraction of NaCl of 3–5%. This liquid provided an intensification of the process of ostrich fat rendering with the controlled melting temperature.
