Abstract. It was studied the possibility of obtaining mycelium concentrate of oyster mushroom (Pleurotus ostreatus) by biotransformation of grain extract. We used triticale extract and strain 23 of Pleurotus ostreatus, obtained from the collection of the S.N.Vinogradarsky Institute of Microbiology, which was cultured by a submerged method. To increase the productivity of P. ostreatus, whey (1%) and corn extract (1%) were introduced into the grain extract. The addition of corn extract to the triticale extract did not have a significant effect on the growth of P. ostreatus: the protein content in biomass increased 1.7-fold (to 21.4 g/100 g of biomass); the introduction of whey caused the growth of it 4.1 times, in comparison with the control (from 8.8 to 36.1 g/100 g of biomass). In the concentrates with whey, compared to the control, the number of some essential amino acids significantly increased: valine (from 384.0 to 2346.0 mg/100 g of biomass); isoleucine (from 282.1 to 1679.0 mg/100 g of biomass); leucine (from 351.6 to 3381.0 mg/100 g of biomass); phenylalanine (from of 246.2 to 1737.0 mg/100 g of biomass); lysine (from 493.3 to 2227.0 mg/100 g of biomass). Analysis of the carbohydrate composition of the biomass of the fungus revealed the presence of arabinose, glucose, hexose, sorbose, xylose, glucitol. Biotransformation of the grain extract when 1% whey was introduced into the substrate ensured the effective cultivation of Pleurotus ostreatus biomass on the by-product of grain processing of triticale on starch. This allows to organize the production of valuable feed and food protein concentrate.
