Abstract. The article presents the results of three-year studies (2016–2018) to determine the content of water-soluble pentosans in the grain of winter rye under the conditions of the south-western Urals. The material for the research was 59 samples from the VIR collection and 3 promising varieties from the Bashkiria Research Institute of Agriculture (Chulpan 7, Chulpan 10, Pamyati Kunakbaeva). The grain was ground in a laboratory mill. Flour and oil cake were sampled according to GOST 13586.5-85. Extraction of samples for measuring the content of water-soluble pentosans (WSP) and the viscosity of the aqueous extract (VAE) was performed according to the method described by D. Boros. VAE was determined by the VSZh-1 capillary viscometer with a capillary diameter of 1.52 mm; the concentration of WSP was determined by a free sugars exclusion method. We selected 9 samples with a low content of water-soluble polysaccharides (1.36–1.50%) per dry matter of grain. In the grain of the reference wheat variety Mironovskaya 808, the average amount of water-soluble pentosans for 2016–2018 was 1.20%. Five samples (GAK Tetra, Yaroslavna, Sibirskaya 82, Immunnaya 762, Vavilovskaya) were characterized by the minimal in the experiment content of WSP (1.36–1.46%) and high protein content (14.8–16.4%). This allowed using them as a source of the studied trait in the breeding of grain-fodder rye. The viscosity of an aqueous extract of grain oil cake of wheat (Mironovskaya 808) was 3.23 cSt; for the studied rye samples it ranged from 5.28 cSt to 33.34 cSt. The value of this index depended not only on the varietal characteristics but also on the year of growing. The lowest extracting viscosity of pentosans was observed in the samples Kombayninyay 3 and Krupnozernaya 2 that allowed classifying them as feed varieties.

Keywords: winter rye; water-soluble pentosans; aqueous extract viscosity; variety; breeding.
