A Method for Obtaining Dry Carbohydrate Protein Product and its Properties

Abstract. The production of maltodextrin from cornmeal implies disengagement of a precipitate – a carbohydrate-protein product (CPP) – after enzymatic hydrolysis of starch and filtration. It is a mixture of non-starch impurities found in cornmeal with a solution of maltodextrin with 70% humidity. It is sticky and porridge-like. Due to the high humidity, it is impossible to use such a precipitate in its raw form, since it quickly deteriorates; it is difficult to dose it and it is poorly transportable. Therefore, CPP needs to be dried to a loose state. To optimize this process, it is necessary to determine the humidity, at which the product becomes loose. With a change in humidity from 0 to 30%, the bulk density of CPP decreased from 716 kg/m3 to 536 kg/m3; the angle of repose was within 33.7 degrees; spatula angle increased from 48.0 degrees to 69.9 degrees; the flowability criterion decreased from 0.128 to 0.020 units. With a higher value of this indicator, the product remained sticky and poorly mobile, therefore, it was not possible to determine its flowability and spatula angles. The maximum humidity of CPP, at which it could be fed into the dryer, was 30%. To reduce humidity, the precipitate was mixed with recycled CPP with 4% humidity, formed after drying. When the initial moisture content of the precipitate was 70%, its ratio to CPP, dried to 4%, was 1.00:1.54. Based on the study results, a method for the production of dry CPP and design documentation for the production equipment were developed.
