Abstract. For the cultivation of nisin producers we proposed a nutrient medium, obtained by mixing the enzymatic hydrolysate of bovine colostrum and the MRS growing medium in a pseudo-boiling layer. The antagonistic properties, cell titre and resistance to oxidation of the nisin producer Lactobacillus lactis cultivated on a modified nutrient medium were studied. The nisin producer was a one-day culture of Lactobacillus lactis ATCC 19435. Cultivation was carried out in a pure MRS medium (control) and a medium containing bovine colostrum hydrolysate in the amount of 5 g, 10 g, and 15 g/100 g of MRS medium. In 48 hours of cultivation with the introduction of 5 g of colostrum hydrolyzate into the MRS medium, the culture activity increased by 38.1% compared to the control, with the introduction of 10 g – by 36.2%, 15 g – by 35.8%. The introduction of 5 g of bovine colostrum enzymatic hydrolyzate into the nutrient medium during the Lactobacillus lactis cultivation improves the growth and reproduction processes of microbial cells of the studied strain in 18 hours by 64.3%, of 10 g – by 78.6%, in comparison with the control. It should be noted that there was a slight decrease in the titre of the Lactobacillus lactis culture with the introduction of 15 g of the hydrolyzate after 24 h of incubation, which is explained by the peculiarities of nisin biosynthesis. At high concentrations of bacteriocin, the nisin formation process in lactobacilli is delayed. With the introduction of hydrogen peroxide after 24 hours of cultivation, the titre of the culture increased 0.3 times when 5 g of colostrum hydrolyzate was added to the nutrient medium (comparing with the control), when 10 g of the hydrolyzate was added –3.3 times, 15 g –3.4 times.
