NFRARED DISCRETE DRYING OF SUGAR-CONTAINING ROOT CROPS FOR USE AS DIETARY SUPPLEMENTS FOR DIABETICS

Summary. Analysis of the current state of technology use infrared heating in agriculture showed that the optimization of the thermal processing of food products with retention of the maximum content of active substances requires the use of a systematic approach to the study of causal and functional relationships of electrotechnological and temporal parameters of infrared treatment affecting the quality parameters of sugar roots at all stages of processing. Solving the problem of effectively managing infrared drying of carrot, beet and Jerusalem artichoke achieved by theoretically derived and experimentally confirmed laws controlling the IR energy supply, which allows to reduce process time dripping by 16-20%. Adapted technique of successive and interrelated stages of theoretical and experimental studies have allowed to optimize the system of management of flash converters ceramic radiation drying technology of sugary roots at which the loss of biologically active substances are not more than 5.4%. The efficiency of use of pulsed ceramic transducers of radiation operating at lowering energy supply mode was researched. Reduction of energy consumption compared with nichrome emitters is 20.9%. First time the constants of heating time roots of Jerusalem artichoke and beet depending on the moisture content and the geometric dimensions were defined. For example heating time constant of roots of Jerusalem artichoke with initial moisture content of 80% and 30 × 5 × 5 mm is 130 seconds and beets with the same parameters – 113 seconds. This fact allows to carry out the harmonization of radiation parameters and product parameters based on the known laws. Studies at the Faculty of Veterinary Medicine and Biotechnology of Irkutsk State Agricultural Academy of nutrition of mice suffering from alloxan diabetes by products of high biological activity based on a mixture of powders of Jerusalem artichoke, beet and carrot have shown that the systematic use of additives in the blood of rodents sugar level decreases. Product was found perspective.
