Summary. Results of researches on studying of meat efficiency and quality of products of slaughter are given at young growth sagination with use of forages of own production and sugar refining by-products. Researches conducted for the purpose of studying of influence of structure and quality of diets on efficiency of animals. For carrying out experiment created three groups of bull-calves eunuchs of black and motley breed at the age of 11 months. Individuals of the I group contained on the main diet. Distinction P groups was in feeding of bull-calves eunuchs that they have a part of a silo corn (60% on nutritiousness) was replaced senazhy of a kozlyatnik east, III – alfalfa senazhy (60% on nutritiousness). Optimization of a ratio of nutrients in a diet was positively reflected in intensity of growth of studied groups of animals. At the end of experiment at the age of 18 months individuals of the III group (448,6 kg) that above, than at contemporaries of I and II groups for 5,5 and 1,1% had the highest live weight. On indicators of meat efficiency and quality of products of slaughter primary position was held by bull-calves eunuchs of II and III groups. They surpassed contemporaries of the I group in the mass of pair ink respectively for 5,0 and 7,1%, pulp – for 5,4 and 7,8%. On accumulation in carcass of a squirrel and fat of an individual of basic option conceded to contemporaries of II and III groups for 3,2 and 5,5%; 10,5 and 16,1% respectively. At them the proteinaceous quality indicator of muscular fabric also was higher. On the power value of products of slaughter they advanced contemporaries of the I group per 1 kg of pulp of ink for 2,4 and 4,9%, and pulp of all ink – for 7,9 and 13,1% respectively. It is revealed that increase of full value of diets due to use of forages with the high maintenance of a protein promotes improvement of indicators of meat efficiency and quality of meat.
