THE EFFECT OF THE GENOTYPE STEERS ON THE QUALITY OF FAT AND ITS FATTY ACID COMPOSITION

Summary. Studies were conducted to a comparative study of the quality of kidney fat and fatty acid composition of intramuscular fat obtained from carcasses of calves Simmental breed and its hybrids I and II generations Herefords. Data analysis of physico-chemical properties of perinephric fat in experimental animals showed that as the foreign type Hereford Simmental cattle increased dry matter content at 0.7-1.0%, 1.0-1.1% fat, increases the number of Gyublya – on 1,4-2,6%, while decreasing the melting temperature at 0,4-1,1°S that certainly shows on improving the quality of fat. A study of intramuscular fat showed that genotype has a significant impact on its fatty acid composition. The highest solids content of saturated fatty acids was characteristic of Simmental crossbred peers who surpassed the total content of the NLC at 2,9-4,0% lauric – by 0.5-0.6%, myristic – on 0,4-0 6% palmitic – by 0.4-0.6%, geptodekanovoy – 0.4 -0.7%, stearic – by 1.2-1.4%, but inferior to the content of the securities MNZHK – 2, 2-2,6% palmitoleic – by 0.6-0.7%, oleic – by 1.4-1.6% PUFA – by 0.7-1.3%, linoleic – by 0.2 0.4% linolenic – by 0.2-0.3%, arachidonic – by 0.2-0.5%, which once again proves the high quality of fat pomesnogo young.
