STUDY OF SOURCE MATERIAL OF WINTER WHEAT FOR BREEDING ON THE CONTENT AND QUALITY OF PROTEIN

Summary. Two hundred samples of winter soft wheat of various origin were studied in 2011-2013 for the content of gluten in grain, the content of total protein in flour (Р), the indicator of sedimentation (S), and the index of quality of protein (S:P). The aim of the investigation was to select the varieties with high content of protein and gluten under conditions of northern regions of Central Volga area for further use in breeding work. Varieties Lutescens 42, Lutescens 314, Moscovskaya 39, Galina, Fisht, O,Rus, Lutescens 589, Lutescens 499H7, Rita, Barkan, Lgovskaya 169, Beseda formed high content of protein and gluten every year. The maximum protein content (18.0 %) was obtained in 2012 in Lutescens 589 of Samara Agricultural Research Institute breeding. Varieties Severnaya Zarya, Lutescens 42, Albina, Malakhit, Lgovskaya 169, Beseda combine high content of gluten with high grain productivity. Productivity of varieties in the collection nursery varied from 95.8 to 1229 g/m2. According to the protein quality index Bezenchukskaya 380, Lutescens 31/98, Barkan, Lutescens 316, Darina, Albina were the best varieties from collection nursery. The maximum indices of protein quality were received at varieties Barkan (4.8) and Bezenchukskaya 380 (4.9). The close correlation between sedimentation index and content of gluten (r = 0.65 ± 0.02) and protein in grain (r = 0.68 ± 0.02) was established. The varieties-sources of the studied signs were selected, which were recommended for their inclusion in hybridization process during development of varieties with high grain quality under conditions of Republic of Tatarstan.
