CONTENT OF MACRONUTRIENTS IN PARENCHYMATOUS ORGANS OF QUAILS AT DIFFERENT AGES

Summary. Quails were grown from day-old to 60-day age. In the different age periods we examined macro mineral composition to determine the possibility of using the liver, heart and gizzard stomach of quails from different age groups as food. The phosphorus concentration in heart of 30-day old quails increased, compared with the day-old ones, from 1.33 ± 0.05 to 2.64 ± 0.03 g/kg, and of 60-day old quails – to 2.99 ± 0.12 (p ≤ 0.001). In the period from 30 to 60 days the content of this element in hearts increased by 0.35 g/kg (p ≤ 0.05). With age there is a decline in the level of sodium in this organ: at 30 days – by 0.67 g/kg, at 60 days – by 0.89 g/kg, compared with day-old age, when its level was 2.09 ± 0.03 g/kg. For the period from 30 to 60 days, the retention of sodium decreased by 0.22 g/kg (p ≤ 0.01), which can be explained by age-related declines in cell membrane permeability. With the analysis of the accumulation of magnesium in the myocardium its decrease was observed only up to 30 days, further this rate remained sensibly constant from 0.19 ± 0.01 to 0.18 ± 0.01 g/kg (p ≤ 0.001). In the liver quantitative changes of magnesium was observed only by the 30th day, the content of it increased from 0.19 ± 0.01 to 0.24 ± 0.01 g (p ≤ 0.05). In tissue of gizzard stomach the increase in the calcium content was observed only during the period from 30 to 60 days and it was 0.09 g/kg (p ≤ 0.01). The concentration of phosphorus in this organ in 30-day old quails increased by 29.0 %, in 60-day old – by 38.2 % (p ≤ 0.01), compared with day-old quails, in which its level was 1.83 ± 0.05 g/kg. The mineral composition of parenchymal organs of quails is characterized by the high content of macronutrients. The highest concentration of calcium (0.33 ± 0.01 g/kg) was observed in the stomach, phosphorus (2.99 ± 0.12 g/kg) and sodium (1.20 ± 0.01 g/kg) – in the heart, magnesium (0.24 ± 0.01 g/kg) – in the liver.
