Summary. The investigations were carried out in 2000-2015 on the basis of FGBNU Don Zonal Research Institute of Agriculture in the steppe zone of Rostov region in order to study the intermutation of winter wheat at intraspecific hybridization in heterogeneous populations using transgression variability based on the protein content in grain of new genotypes under condition of limiting environmental stressors. When crossing high- and middle-protein forms in accordance with different schemes it were selected genotypes, combining high productivity with protein content exceeding 14%. The frequency of manifestations of transgression by the quantity of protein in these crosses is 5.5%, and its degree is 8-9%. However, when crossing middle-protein forms the transgression frequency reached 9% and its degree was 12.2%. In the grain of high-protein recombinants (more or equal 15%) there was a lot of gluten, but it corresponded to the second or third group on elasticity. It was revealed transgressions at crossing of genotypes with the first and second groups on gluten quality. Under conditions of the steppe zone of Rostov region the amount of gluten positively correlated with the rate of sedimentation (0.25*-0.88*), flour power (r = 0.25*-0.58*), volume of bread (0.23*-0.97*). The amount of protein, gluten and the rate of sedimentation, defines the rheological properties of dough in genotypes, can be inherited independently. In combinations based on high- and middle-protein genotypes with prolonged forming the segregation of morphobiotypes with protein content more than 14% can be identified almost in any generation of the population. These principles are in the basis for the development of new lines of winter wheat. It was created new valuable and strong varieties Donera, Vestnitsa, Boyarynya, Donmira, Oktava 15, which are promising for different regions of Russia.
