Summary. The analysis of 6 rice samples with colored pericarp, pertained to the varieties of special purpose of the genetic collection (standard variety Rapan), was carried out in 2012-2015. This analysis was based on the regression models, variance analysis and quantitative characters (amylograph parameters of starch in endosperm, biochemical and technological parameters of grain). Rice was grown at the experimental plot of All-Russian Research Institute of Rice Breeding, Krasnodar. The soil was paddy, meadow-chernozem with the most fertile and thick humus layer. The technological characteristics of quality were determined according to GOSTs 10842-89, 10843-76, 10987-76; amylograph parameters – by Brabender micro visco-amylograph; amylose content in rice cereals was measured according to requirements of International Standard ISO 6647-1987; linear dimensions of caryopsis and its length to breadth ratio (l/b) were determined with a scanner (image analysis system LA 2400, WinFOLIA, WinRHIZO, WinSEEDLE). Varieties Mavr, Ryzhik, Mars had a relatively high weight of 1000 grain in 2013-2015: 24.5-26.9 g, 26.0-27.5 g, 23.2-24.9 g respectively; Yuzhnaya Noch variety – the low one – 20.9-21.9 g. The common tendency to decrease in thousand grain weight was observed for all varieties in 2015 compared to 2014. Yuzhnaya Noch variety (0.0%) belongs to the group of non-amylose, glutenous varieties. Rubin (20.9-22.2%), Mavr (20.8-22.2%) and Gagat (19.5-22.2%) are medium-amylose varieties; Rapan (16.9-17.5%), Mars (17.5-19.7%) and Ryzhik (18.3-18.8%) are low-amylose ones. The largest negative contribution into formation of the trait “the content of safe kernel” was brought by grain fracturing. In order to predict technological indicators of grain quality of studied rice varieties it was developed the model of rice grain quality: CSK = -0.835M1000 a.s.z. + 1.407HC – 0.866F + 0.333TCO (CSK is the content of safe kernel, HC is husk content, F is fracturing, TCO is total cereal output). The study material was ranged according to quantitative characteristics of grain for optimization of the database of rice gene plasma collection and selections in breeding process.
