CONTENT OF BIOLOGICALLY ACTIVE PHENOLIC COMPOUNDS IN SIBERIAN FRUITS AND BERRIES

Summary. The article presents experimental data on the total content of bioflavonoid and main groups of phenolic compounds (catechins, anthocyans, leucoanthocyanins, flavonols) in the fruits of honeysuckle, cherry, black currant, golden currant, apple, guelder rose and grape 498 variety samples in total). The research was carried out at the premises of the M.A. Lisavenko Research Institute of Horticulture of Siberia (Barnaul) in 2013-2015. Total content and component composition of phenolic compounds were determined in ethanolic extracts of fruits by spectrophotometric and colorimetric methods. The results were processed using mathematical methods of statistics. It was revealed high variability of bioflavonoid content in the studied varieties and hybrids. Comparative analysis in this aspect was conducted. A high level of phenolic compound accumulation was discovered in the fruits of honeysuckle, cherry and guelder rose. Maximum values for them were 2267.6, 2036.3 and 1375.3 mg/100 g, correspondingly. Promising varieties with high concentration of bioflavonoids in fruits were selected: honeysuckle Berel', Yumis, hybrid 36-23-07; cherry Pamyati Levandovskogo, Seliverstovskaya, Ashinskaya, interspecies hybrids VCh 89-95-51, VCh 89-95-48, VCh 11-85-39; guelder rose Taezhnye Rubiny, 5-3-04, No3; black currant Zabava, Lama, Sokrovishche, Agata; golden currant Barnaul'skaya, Levushka, 3685/13, grape Moskovityanin, Pamyat' Lazarevskogo, Agat Donskoi, Katyr; apple Suvenir Altaya, Altaiskoe bagryanoe, Mulatka, Altaiskoe Zimnee. Phenolic composition of fruits differed mainly in quantitative variations of specific fractions. The majority of cultures are characterized by the domination of anthocyans and leucoanthocyanins, which compose 60-80% of the total bioflavonoid complex. The fruits of honeysuckle, cherry and grape are rich in catechins (29%, 21% and 14% correspondingly). The fruits of black currant, guelder rose and apple, except for anthocyan pigments, are rich in flavonols (12-17%).
