Summary. A wasteless technology of triticale grain processing for starch was developed in the All-Russian Research Institute of Starch Products. In the technological process, it is provided for the use of cellulolytic enzymes for the destruction of beta-glucans, arabinoxylans, pectins and other carbohydrates, representing a group of non-starch polysaccharides. We studied the basic chemical composition of secondary products of processing of triticale grain for starch: pulp, extract (soluble substances extracted in water during the process of maceration of grain) and B-starch (insoluble grain protein with small starch granules). The crude pulp contains 35-40 % of dry matter, which includes 11-13 % of starch, 2-3 % of fat, 7-9 % of protein. For B-starch the values of these parameters are 38-40, 47-59, 0.2-0.3 and 36-53 %, correspondingly. The content of dry matter in liquid extract reaches 8-12 %; the mass fraction of protein in it is 23-26 %. Due to the low content of dry substances in the extract, it is required its concentration under vacuum in the evaporator, which can be done up to a concentration of dry substances of 45-50 %. By mixing the pulp, B-starch and extract, condensed up to 45 % of dry matter, followed by drying at 60 degrees, the samples of triticale dry food were prepared. It contains (in terms of absolutely dry substance) 24.0-27.0 % of crude protein; 32.5-34.4 % of crude fiber; 21.6-23.8 % of carbohydrates (starch and reducing substances); 4.5-6.1 % of crude fat; 2.7-4.2 % of non-protein nitrogenous substances; 6.9-7.7 % of total ash. The ratio of carbohydrate and protein components, as well as the destruction of non-starch polysaccharides in the process of production of triticale starch, enables to assume a higher nutrient value of dry triticale feed in comparison with other feeds from grain (barley, wheat, rye and triticale) and products of their processing.

Keywords: grain triticale, triticale feed, starch, secondary products.
