Summary. Rye pentosans are characterized by many functional properties. Identification of varieties with different pentosan content enables to determine the approaches to the management of the technological potential of winter rye grain, affecting the direction of use of the final products. The aim of the work was to determine the content of pentosan fraction in winter rye grain by different methods for further use in breeding programs and to select promising varieties with the high and low content of soluble pentosans in grain. To determine the content of arabinoxylan fraction we used different methods: chemical (micro method with orсin-chloride; determination of the kinematic viscosity of water extract (VWE)), chromatographic (HPLC-RI system), spectral (spectroscopy of near-IR range of the spectrum (NIRS) by Multi Purpose FT-NIR Analyzer). Marusen’ka, Ivan and Ogonek varieties were characterized by the smallest amount of water-soluble pentosans (WSP) and VWE, but the latter strongly varied over the years. Varieties Roksana, Tatarskaya 1, Pamyati Kunakbaeva distinguished by the high content of WSP and viscosity. Podarok Variety had stable low viscosity; the amplitude of its variability was 14.1-18.3 cSt. The WSP indicator does not allow clearly differentiating the population varieties by the purpose of use at forage and baking ones. VWE expands the limits of sign variability, but its value is subjected to significant environmental variability. In some varieties VWE values differ several times (Ivan, Marusen’ka, Zilant), in other it is more stable (Podarok). The chemical method for determination of the amount of water-soluble pentosans using orcine-chloride gave the similar results with the chromatographic evaluation of arabinoxylans. Spectrometry in the near-red range as a method of quantitative evaluation requires verification on a larger panel of population varieties. VWE had no significant correlation with the amount of arabinoxylans determined by the chromatograph and the NIR analyzer. Probably the viscous properties of the pentosan fraction are not connected so much with the amount of arabinoxylan, but rather with their structure (molecular weight, aggregation with proteins) and properties (water absorption, solubility, the degree of polymerization).
