AGROTECHNOLOGICAL EVALUATION OF AMARANTH VARIETIES UNDER CONDITIONS OF TAMBOV REGION

Summary. The investigations were carried out in 2013–2015 on the experimental plot in the instructional farm “Roshcha” in Tambov region in order to assess the amaranth varieties in terms of agrotechnology and to select the samples with higher protein content for use in the food industry. The soil of the plot was chernozem-like, gley, medium thick, medium humic, heavy loamy on alluvial deposits. The content of humus was 3.9–4.7 %, of total nitrogen – 10.5–19.6 mg/100 g, of mobile phosphorus – 8.8–10.7 mg/100 g, of exchangeable potassium – 9.6–14.4 mg/100 g; the level of acidity – 7.44–7.46; the total exchangeable bases – 50.4–53.1 mmol/100 g. The objects of the research were amaranth varieties Krepysh, Bulava, Zelenaya Sosulka, Pamyati Kovasa, Kizlyarets. The climatic conditions in 2013–2015 were favorable for amaranth cultivation. The duration of the vegetation period of medium-ripening varieties Krepysh, Kizlyarets, Pamyati Kovasa was 110 days, of early-ripening ones (Zelenaya Sosulka, Bulava) – 96 and 100 days, respectively. The maximal yield of amaranth green mass (3.241 kg/m2) was formed by Bulava variety with the highest thousand seed weight (0.867 g). The minimal yield was characteristic for Kizlyarets variety (2.653 kg/m2) with the thousand seed weight of 0.695 g. According to the protein content in leaves (22.7 and 22.6 %) and seeds (8.2 and 17.5 %) Kizlyarets and Bulava varieties were distinguished. Usage of amaranth seeds in the manufacture of fermented kvass improves physical and chemical characteristics of the drink without reduction of organoleptic properties that will expand the assortment of the product.
