INCREASE IN MEAT PRODUCTIVITY OF FINE-WOOL SHEEP BY CROSSINGS

Summary. It was studied the efficacy of crossings of fine-wool ewes Precoce (P) with sires of meat-fat coarse-wool breeds: Edelbai (Ed) and Kazakh Fat-tail (KF) ones, in order to increase the meat productivity of offspring. Ninety Precoce ewes from the farm of Kh.K. Alikhamova (Tambov region) were included in the experiment. The study was carried out in 2013–2014. Three experimental groups of rams for breeding and fattening up to 8 months were formed: the first one – purebred Precoce, the second one – crosses of Precoce and Edelbai breeds, the third one – the crosses of Precoce and Kazakh Fat-tail breeds. To evaluate meat productivity, three rams from each group were slaughtered. Meat productivity was measured according to the system of the All-Russian Institute of Animal Husbandry. The offspring of Precoce ewes and Edelbai sires was characterized by the best slaughter qualities. Their slaughter yield was higher by 6.62 % than that of purebred sheep. The morphological butchering of carcasses showed their superiority in the content of flesh, on the output of cuts of the first quality by 0.54 %. The area of “muscle eye” in crossbred rams from the second group was higher by 1.73 cm2 in comparison with purebred analogs, from the third group – by 0.97 cm2. The protein-quality index of meat of rams from the third group was reliably higher than in the analogs from the first and second groups, by 0.9 and 0.4 points, correspondingly. The amount of essential amino acids in rams with the genotype (Ed x P) was 37.32 %, which was reliably higher than in purebred animals by 0.76 % and in individuals with the genotype (KF x P) by 0.33 %. The products of crosses with the Edelbai breed contained cholesterol less by 1.94 mg % (P is more or equal to 0.99) and with the Kazakh Fat-tail one by 1.01 mg % (P is more or equal to 0.95) in comparison with pure breed rams. Thus, the crossing of the Precoce ewes with sires of meat-fat type facilitates the increase in production and quality of mutton.
