PECULIARITIES OF MEAT PRODUCTIVITY OF SALERS BULLS DURING THE PROCESS OF THEIR ACCLIMATIZATION UNDER CONDITIONS OF THE NORTHERN TRANS-URALS

Abstract. The paper presents a description of meat productivity of the specialized meat breed Salers during their acclimatization under conditions of the south of Tyumen region. The studies were conducted from 2005 to 2012 under conditions of OOO “Soyuz”, Sorokinsky district, Tyumen region, on the basis of methodological recommendations for evaluating the meat productivity of cattle. The investigation was carried out at the slaughtering of three medium-sized bulls at the age of 15 and 18 months from different generations of animals (genetic-ecological generations). In this case, the imported animals are considered to be zero generation, the descendants, derived from them, belong to the first generation, the descendants of the first generation – to the second generation, and the descendants of the second generation belong to the third genetic-ecological generation. The acclimatization process under the new breeding conditions was quite successful, which was manifested in the increase in the qualitative and quantitative composition of meat production. With age, regardless of generation, muscle and fat tissue increased in carcasses, both in absolute and relative indices, while the relative yield of inedible part decreased. Also, the later age of slaughter of animals is justified, it should be not earlier than 18 months, since before this age there is an intensive build-up of the fleshy part of the carcass. Thus, at the age of 15 months, the meat index was 3.47–3.83; this does not even correspond to the norm of combined breeds. At 18 months, it increased by 0.58 units on average; and by generation, it was 4.07; 4.34; 4.37. Slaughter at the age of 18 months allows to increase the yield of the carcass by 16.1–19.2% with a higher energy value.
