Abstract. The causes of infections are diverse, but the main one is microorganisms that affect the organism with the help of toxins entering the human body with food, primarily of animal origin. The purpose of the work was to systematize the mechanisms, paths and factors of transmission of pathogens to the human body, to develop graph models and algorithms for their determination, which could automate this process, as well as to identify factors affecting the safety of food of animal origin based on traceability systems and HACCP (Hazard Analysis and Critical Control Points). The study was carried out in 2018. A classification of anthroponosis and zoonoses was carried out, based on the approach of Gromashevsky and ICD-10 coding system. It was developed a graph model for determining the damage of the human gastrointestinal tract at the fecal-oral transmission mechanism. This model forms the basis of the algorithm for determining human diseases. The predominant route of anthropozoonosis transmission is alimentary one – 75.0%, water route takes the second place – 12.5%, and the third is aerogenic and contact route – 6.55% each. The fecal-oral route of transmission of infections is a leading one (87.5%). To reduce the risk factors for the emergence of human infectious diseases, they need to be constantly monitored in food production along the entire chain, from the production of animal raw materials to the sale of finished products. The paper shows the influence of factor diseases on the growth of infectious diseases and the growing role of veterinary and sanitary examination of food raw materials, animal feed, semi-finished products and finished products.
